Finely grated peel and juice of 1 orange
1 cup long-grain white rice
12 whole black peppercorns
Finely grate peel of 1 orange and set aside. Squeeze juice from orange into a measuring cup. Add water to measure 2 cups. Then place in a medium -size saucepan and bring to a boil. Add rice and peppercorns. Cover; reduce heat to low and simmer gently for 20 to 25 minutes, until liquid is absorbed and rice is tender. Stir in orange peel with a fork.
